Lysozyme is a glycosidase enzyme composed of 129 amino acid residues, with 4 disulfide bonds maintaining the structural stability. Its molecular weight is approximately 14,307 Da. The active center of it depends on the glutamic acid at position 35 and the aspartic acid at position 52.
Physical properties
Appearance: White or slightly white freeze-dried powder, soluble in water, insoluble in ether and acetone.
Stability: Strong heat resistance in acidic environment (resistant to heat at 96℃ for 15 minutes with 87% activity retention), easily inactivated in alkaline environment. The aqueous solution is completely inactivated at 62.5℃ for 30 minutes, but retains activity in 15% ethanol solution.
Optimal conditions: Action temperature 35℃, pH 4—6.5.
1. Medical field
Indications: Acute and chronic pharyngitis, oral ulcers, chronic conjunctivitis, skin infections (herpes zoster, chickenpox).
Dosage forms and usage:
Chewable tablets (20mg/tablet): Chew and take 4-6 times daily.
Eye drops (0.5%): For treating chronic conjunctivitis, use several times daily.
Injections: 50-100mg per dose, intramuscular injection.
Advantages: Non-antibiotic mechanism, no development of drug resistance, high safety.
2. Food Industry
Food Preservation and Shelf Life Extension:
Meat/Poultry Products: 0.05% lysozyme combined with sodium chloride and glycine can extend the shelf life.
Dairy Products/Cakes: Inhibits spoilage bacteria such as Bacillus subtilis, used in cheese and cream cakes.
Baby Food: Promotes the proliferation of bifidobacteria, enhancing intestinal immunity.
3. Biotechnology and Cosmetics
Biotechnology: Preparation of protoplasts for cell fusion and genetic manipulation.
Cosmetics: Additives in toothpaste and cosmetics to inhibit oral bacteria (such as dental plaque bacteria).
Adverse reactions
Occasional allergic reactions (rash) may occur. Those allergic to egg white should avoid using it.
The eye drops may cause transient irritation. The symptoms will subside upon discontinuation of use.
