Molecules and Structure
Molecular weight: Approximately 14.3 - 14.4 kDa (monomeric peptide, containing 129 amino acids).
Structural characteristics: Consists of 4 disulfide bonds for stability, with the N-terminus being lysine and the C-terminus being leucine; has a dual structure domain of α-helix and β-sheet, and the active site contains key amino acids (Glu-35, Asp-52).
Physicochemical properties:
Appearance: White or slightly white freeze-dried powder, slightly sweet, no odor.
Solubility: Easily soluble in water (10 mg/ml), insoluble in acetone and ether.
Stability: Resistant to acid (active retained 87% at 100°C for 45 minutes at pH 3), easily inactivated in alkaline environment; resistant to organic solvent treatment.
Activity conditions
Optimal pH: 5.3 - 6.4 (food preservation), active pH range 6.0 - 9.0.
Optimal temperature: 35°C, maintains high stability at high temperatures (87% activity retained at 96°C for 15 minutes at pH 3).
Pharmaceutical field
Indications: Acute and chronic pharyngitis, oral ulcers, chickenpox, herpes zoster, conjunctivitis, etc.
Dosage form and dosage:
Oral lozenges (20mg per tablet): 4-6 times daily.
Enteric-coated tablets (10mg per tablet): 3 times daily, 3-5 tablets each time.
External use: 1-2% solution for instillation or powder spray.
Safety: Occasional mild allergic reactions; the derivative of lysozyme chloride can also be used for expectoration, hemostasis and antiviral purposes.
2. Food industry
Antimicrobial function:
Inhibit Gram-positive bacteria (Bacillus subtilis) and some negative bacteria (Escherichia coli, Proteus mirabilis), with the optimal addition amount of 0.05%.
Complementary formula: When used in combination with phytate, glycine or lactic acid, the effect can be enhanced.
Application scenarios:
Agricultural products (promote the proliferation of bifidobacteria), meat products, aquatic products, baked foods and beverages for preservation.
3. Cosmetics and biotechnology
Cosmetics products:
Toothpaste (prevent dental caries, reduce gum bleeding), mouthwash (addition amount 0.1%).
Skin care products (≤1% addition amount): Improve acne and eczema, such as Gladskin face cream.
Biotechnology:
Prepare protoplasts for genetic engineering or cell fusion.
4. Livestock farming
Alternative to antibiotics: Reduce intestinal diseases in livestock and poultry, improve feed conversion rate; improve water quality and enhance immunity in aquaculture.
Safety: Certified as a safe food additive by FAO/WHO (1992); Non-toxic and has no side effects, does not damage human cells.
Storage:
Temperature: Store in a refrigerator at ≤ -20℃, protected from light, and avoid repeated freezing and thawing.
Stability: Long-term storage or in high temperature and high humidity environments will lead to a decrease in enzyme activity, and an increase in dosage is required for compensation.
