I. Basic properties and aroma characteristics
Chemical structure: molecular formula C₄H₆O₂S₂, containing a six-membered ring structure formed by two hydroxyl groups and two sulfur atoms.
Physical properties: white to light yellow crystalline powder, melting point about 160-165℃, slightly soluble in water, easily soluble in organic solvents such as ethanol and propylene glycol.
Aroma characteristics:
Sulfur aroma: strong barbecue aroma, burnt aroma, nutty aroma, with a slight onion and garlic aroma.
Thermal stability: high temperature resistant, suitable for food flavors that require high temperature processing such as baking and grilling.
II. Application in food flavors
Meat flavors:
Simulate the caramel flavor of grilled meat, ham, and smoked meat, often compounded with pyrazines (such as 2,5-dimethylpyrazine) and furanones (such as methylcyclopentenolone) to enhance the sense of reality. Typical dosage: 0.1-10 ppm (needs to be adjusted according to the formula, excessive use is prone to produce metallic odor).
Nut and baking flavors:
Used in peanut, hazelnut, and coffee flavors to give a caramelized aroma after baking.
Works with maltol and ethyl maltol to enhance the balance between sweetness and caramel.
Convenient foods and seasonings:
Added to instant noodle seasoning packets and puffed foods to enhance the layering of "fried" or "charcoal grilled" flavors. Used in trace amounts (<5 ppm) in soy sauce and sauces to enhance the complex salty aroma.
III. Application in daily chemical fragrances
Special fragrance design:
Used in men's perfume or sports fragrance, combined with leather and tobacco to create a rough sulfur-smoky texture. Formula example:
DHDT (0.05%) + isobutylquinoline (0.01%) + coumarin (0.5%) → smoky leather base.
Functional products:
Soap and shower gel: provide a clean feeling similar to "hot spring sulfur", and the dosage must be strictly controlled (usually <0.01%).
Household cleaners: cover up the pungent smell of chemical solvents, and add trace amounts (0.001-0.005%) to enhance the "fresh" hint after decontamination.
